Preheat the oven to 375. Cream your butter & sugar together then add your eggs. Mix well.
Using a mortar & pestle or a food processor chop your lavender leaves finely. You can also just smash them with a rolling pin.
Add the matcha powder and lavender leaves to your mix.
In separate bowl, combine the remaining dry ingredients and add them to the mixture. Mix well and then drop by teaspoons onto your baking sheet.
Bake for 9 minutes. These cookies baked super fast in my oven so keep on checking to make sure they don't burn! Start them on the top rack and switch halfway through. They are done when the bottoms are a light brown but there's still a moist center.
Make your drizzle by adding enough water to your powdered sugar to make it runny enough to drizzle. You can flood your cookie or drizzle any designs you would like!
After the drizzle has set, sprinkle the cookies with the remaining lavender leaves & serve!
Notes
Organic lavender is very strong! Start with the 3/4 tsp. and you can adjust per your taste. You don't want it to taste like you are eating a mouthful of soap!Don't like matcha? Eliminate the green tea and make tasty lavender cookies. You can also divide the dough and make both!Recipe was adapted from 2 recipes: https://www.cakenknife.com & https://www.thespicehouse.com
